Cajun Fisherman's Stew

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 stalk of celery, chopped
  • 1 yellow bell pepper, chopped
  • 1 teaspoon Cajun seasoning
  • 3 small cloves of garlic, crushed
  • ½ teaspoon salt
  • 1 cup water
  • ½ cup white wine (dry)
  • 1 (14.5 ounce) can diced tomatoes
  • ½ pound medium shrimp, shelled and deveined
  • ½ pound cod fillet, cut into 1-inch pieces
  • Crusty bread

  1. Heat olive oil in a 4-quart saucepan set over medium-high heat. Add onion, celery and pepper; cook for 8 minutes, or until onion is golden and tender, stirring occasionally.
  2. Add Cajun seasoning, garlic and salt; cook and stir for 1 minute.
  3. Add water, wine and tomatoes to saucepan; heat to boiling. Reduce heat to medium-low, cover saucepan then simmer ingredients for 10 minutes.
  4. Add shrimp and cod to saucepan; cover and simmer for about 4 minutes, or until shrimp and cod just turn opaque throughout. Stir halfway through cooking time.
  5. Ladle stew into soup bowls and serve with bread.
